V8 engines because they have more valves, utilize fuel less efficiently, typically than V6 engines. This is also because the extra two valves yield a much higher power output. Also V8 engines typically have more wear and tear than V6 engines because of the extra energy they yield compared to V6 engines. So, if you want performance go with a V8 engine. If you are looking for efficiency, go with a V6.
