Crock-Pot Hot Chocolate

Ingredients: 1/2 cup dry baking cocoa 12 oz can sweetened condensed milk 1/8 teaspoon salt 7 1/2 cups water 1 1/2 teaspoon vanilla Marshmallows, as many as you want Directions: 1.) In crock-pot combine milk, water and vanilla. 2.) Add dry cocoa and salt, stir until smooth. 3.) Cover and cook on high 2 hours or on low for 4 hrs or until very hot. 4.) Top each serving with marshmallows, I also love whipped cream and a sprinkle of cinnamon I would recommend cutting the recipe in half for less than five people.

Slow Cooker Chicken Enchilada Soup Recipe

INGREDIENTS: 2 boneless skinless chicken breasts (about 1 pound) 2 cups good-quality chicken stock 1 1/4 cup (or 1 10-ounce can) red enchilada sauce*, homemade or store-bought 2 (14-ounce) cans black beans, rinsed and drained 1 (14-ounce) can fire-roasted diced tomatoes, with juice 1 (15-ounce) can whole-kernel corn**, drained 1 (4-ounce) can diced green chiles 2 cloves garlic, minced 1 white onion, peeled and diced 1 teaspoon ground cumin 1 teaspoon salt, or more/less to taste optional garnishes: chopped fresh cilantro, diced avocado, diced red onion, shredded cheese, sour cream, tortilla strips/chips

Slow Cooker Chicken Chili

Ingredients: 1 1/2 pounds boneless skinless chicken breast 1 1/2 teaspoons chili powder 1 teaspoon cumin 1 teaspoon garlic powder 2 cups chicken broth 1 small can of green chiles 2 cans great northern beans, drained and rinsed 2 cups frozen corn (can also use canned corn) 3 tablespoons butter 3 tablespoons flour 1/2 cup milk 1 teaspoon chicken base (or 1 bouillon cube), dissolved in 1/2 cup hot water salt and pepper to taste 1/4 cup sour cream www.somewhatsimple.com
