Tuna Salad with Diced Red Onion, Celery and Fresh Dill Recipe

Ingredients: 2 (5 ounce) cans no-salt-added solid white tuna in water, drained very well ¼ red onion, finely diced 3 ribs celery, finely diced 2 tablespoons fresh dill, finely chopped ¼ cup plus 1 tablespoon real mayonnaise ¼ teaspoon salt, plus an extra pinch ½ teaspoon freshly cracked black pepper ½ teaspoon yellow mustard ½ teaspoon lemon zest Preparation: -In a medium bowl, combine the well-drained tuna with the remainder of the ingredients, and mix well; keep refrigerated until ready to serve.

Bacon, Cheddar and Pear Panini Recipe

Ingredients: 1 tablespoon jam, such as currant or fig or Ikea’s lingonberry (what I used) 2 slices of nice, bakery-style bread, from a multigrain or Italian boule for example 2 slices Cheddar 2 slices cooked bacon 1/4 small pear, thinly sliced 1. Heat a panini machine. (Note: If you want to make a grilled cheese, follow the directions on the RS website — link is above.) Spread the jam on 1 slice of the bread. Layer the pear, bacon and cheddar on top. 2. Press the sandwich in the panini machine until the bread is toasted and the cheese is melted, 3 to 5 minutes total depending on your machine.
