Loaded Potato Pancakes with Shredded Hash Browns Recipe

Ingredients For the potato pancakes: 1/2 bag Ore Ida Shredded Hash Browns 2 eggs 1/4 tsp paprika 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp chili powder 1/4 tsp ground cumin Salt and pepper to taste For the toppings: 8 cups chili 2 Cups cheddar cheese blend 1 Cup sour cream 2 scallions, green part only, sliced Instructions Let the hash browns defrost. Season with dried spices. Beat eggs in a separate bowl and mix together with the potatoes. In a skillet over medium heat spray with cooking spray and form patties. Let cook covered until golden brown on bottom side, about 5 minutes. Flip and repeat covered. Serve with 1/2 cup of the chili per pancake, cheese, sour cream and scallions
