This is such a great idea! We can all agree sliders are wonderful. Use zucchini slices instead of buns to drastically cut the calories, or just for a nice change during the summer months.

Pasta Salad with Avocado Hemp Dressing

You had me at avocado. Ingredients: 12 ounces pasta of your choice veggies of your choice, cut into small pieces 1/4 cup hemp seeds 3/4 cup extra virgin olive oil 1 1/2 tbsp freshly squeeze lemon juice 1 ripe avocado 1 clove garlic, minced 1/2 tsp sea salt 2 heaping tsp of smoked paprika 1/2 tbsp Dijon mustard 1 tbsp brown rice vinegar dash of soy sauce

Baked Salmon with Mango Ceviche

Pineapple Upside Down Pancakes

Use your favorite pancake recipe, preferably one that makes thick, sweet pancakes. Pour the batter in the pan and add a pineapple ring. Flip when it's ready. To fry the pineapple, turn the heat up to high for just a second before removing from the pan.

These are so good! I always serve them with some homemade marinara (just simmer crushed tomatoes with garlic, salt, pepper, oregano, basil, and a bay leaf). Slice up your zucchini into fries. Dip each slice in a beaten egg, then in seasoned breadcrumbs. Bake until brown and crispy.
