Ever wonder why Idaho produces such great potatoes? Well, potatoes grow in fairly poor soil. In Idaho there is a line of small volcanoes and when they erupt, the ash carries nutrients and minerals which settle in the soil, helping potatoes grow.

Here's some interesting facts about the South American purple potato. All potatoes are high in potassium, but these have extra antioxidants in them! Whoo, purple food!
