Muffin

A muffin is an individual-sized, baked product. It can refer to two distinct items, a part-raised flatbread and a cupcake-like quickbread. The flatbread is of British or European derivation, and dates from at least the early 18th century, while the quickbread originated in North America during the 19th century. Both are common worldwide today.

Peanut Butter Muffins in a Blender

INGREDIENTS: 1 medium ripe banana, peeled 1 large egg heaping 1/2 cup creamy peanut butter (I recommend using classic storebought peanut butter, and not natural or homemade) 3 tablespoons honey (agave or maple syrup may be substituted) 1 tablespoon vanilla extract 1/4 teaspoon baking soda pinch salt, optional and to taste heaping 1/2 cup mini semi-sweet chocolate chips DIRECTIONS: Preheat oven to 400F. Prepare mini muffin pans by spraying very well with floured cooking spray, or grease and flour the pans; set aside. If keeping gluten-free for health reasons, simply use cooking spray or grease the pan. Lavender Cupcakes with Honey Frosting

Ingredients: For the cupcakes: 1/2 cup (1 stick) butter, softened 1 cup sugar 2 eggs 2 teaspoons vanilla extract About 1/2 teaspoon red and 1/2 teaspoon blue food coloring* 1 1/2 cups all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 2 1/2 tablespoons dried lavender buds 2/3 cup cold milk For the frosting: 1/2 cup (1 stick) unsalted butter, softened 8 ounces cream cheese, softened 4 cups powdered sugar 2 teaspoons vanilla extract 2 tablespoons honey, plus a little extra for drizzle

Pumpkin pineapple spice muffins

Ingredients: 2 cups all purpose flour 1 tsp baking soda 1 tbsp baking powder ½ tsp salt 2 tsp cinnamon 1 tsp ground ginger ¼ tsp allspice 2 cups pumpkin puree (if using canned, choose 100% pure pumpkin - not pumpkin pie filling) ⅔ cup vegetable oil ¾ cup brown sugar, packed 1 tsp vanilla extract 2 eggs 1 cup pineapple chunks (drained, if canned, or cut in ¼" pieces if fresh)

Banana Yougurt Muffins

This recipe is quick, easy and the muffins will fill you up! I make them for my boyfriend because he has such a high metabolism. They keep him full at work until he can get lunch. You can add a lot of different mix-ins. So far, we've tried chocolate chips and some dried fruits. The oats seem to make the muffins more hearty and filling than the oatbran. Enjoy!
