Ingredients 1 1/2 lbs boneless skinless chicken breasts 5 medium carrots, peeled and chopped (1 3/4 cups) 1 medium yellow onion, chopped (1 1/2 cups) 4 stalks celery, chopped (1 1/4 cups) 3 cloves garlic, minced 3 Tbsp extra virgin olive oil 6 cups low-sodium chicken broth (3 - 15 oz cans) 1 cup water 1/2 tsp dried thyme 1/2 tsp dried rosemary, crushed 1/4 tsp celery seed, finely crushed* 2 bay leaves Salt and freshly ground black pepper, to taste 2 cups uncooked wide egg noodles 3 1/2 Tbsp chopped fresh parsley 1 Tbsp fresh lemon juice Saltine crackers or parmesan cheese, for serving (optional)

Ingredients 1 lb boneless skinless chicken breast, cooked and shredded (3 cups) 8 slices bacon, cooked and crumbled* 1/4 cup butter, diced into 1 Tbsp pieces 1 large red bell pepper, diced (1 1/2 cups) 1 medium yellow onion, diced (1 1/4 cups) 1 - 2 jalapenos, seeded for less heat if desired, finely chopped 4 cloves garlic, minced 1/3 cup all-purpose flour 6 cups low-sodium chicken broth 3 medium russet potatoes, peeled and diced slightly less than 1/2-inch thick (3 cups) 2 bay leaves Salt and freshly ground black pepper, to taste 2 1/2 cups fresh or frozen corn 1 1/2 cups half and half Green onions and seeded, finely chopped jalapenos (optional), for serving

Ingredients 1 Tbsp olive oil 2 lbs lean ground beef 1 large yellow onion, finely chopped 3 cloves of garlic, finely minced 2 (14.5) oz cans diced tomatoes with green chilies 3 (8 oz) cans tomato sauce 2 1/2 Tbsp chili powder 1 Tbsp ground cumin 1 Tbsp paprika 2 tsp cocoa powder 1 tsp granulated sugar 1/2 tsp ground coriander Salt and freshly ground black pepper, to taste 1 (15 oz) can dark red kidney beans 1 (15 oz) can light red kidney beans Serve topped with: Cheddar and Monterey Jack cheese, sour cream, chopped red or green onions, cilantro, roasted peppers, or hot sauce Optionally serve with: fresh cornbread or biscuits, baked russet potatoes, saltine crackers or tortilla chips
