Chimichanga

Chimichanga (/ɪmiˈæŋɡə/; Spanish: [tʃimiˈtʃaŋɡa]) is a deep-fried burrito that is popular in Tex-Mex, Southwestern U.S. cuisine. The dish is typically prepared by filling a flour tortilla with a wide range of ingredients, most commonly rice, cheese, machaca (dried meat), carne adobada (marinated meat), carne seca (dried beef), or shredded chicken, and folding it into a rectangular package. It is then deep-fried and can be accompanied with salsa, guacamole, sour cream, and/or cheese.

INGREDIENTS ½ tbsp chili powder ½ tsp cayenne pepper ½ tbsp garlic powder ½ tbsp all purpose flour 1 tbsp vegetable oil 1½ lbs chicken breast, boneless, skinless, cut in cubes 1 yellow onion, chopped 1½ jalapenos, seeded and minced 1 tbsp chopped garlic 1½ to 2 cups chicken broth, plus extra if necessary 2 tbsp red wine vinegar 1 (15-ounce) can pinto beans, drained and rinsed juice from 1 lime ¼ cup chopped fresh cilantro leaves 2 cups vegetable oil flour tortillas, steamed 1½ cups shredded pepper jack cheese 1 cup shredded iceberg lettuce ½ cup salsa ½ cup sour cream ¼ cup seeded and diced tomatoes
