Skillet Breakfast Strata Recipe

Ingredients 6 cups (one-inch) cubed day old rustic bread ½ pound bacon, cut into small bits and cooked ½ medium chopped onion, sautéed for 5 minutes 8 cups baby spinach, cooked for 2 minutes in boiling water and carefully squeezed of all water 1 cup grape tomatoes, halved 4 ounces (about 1packed cup) cheddar cheese, shredded 4 large eggs ¾ cup milk ½ cup heavy cream ½ teaspoon Dijon mustard 1 teaspoon kosher salt ½ teaspoon fresh ground black pepper Garnish: 2 tablespoons chopped parsley

Ever had a major craving for something sweet for breakfast? Well, now you can get that AND get the nutritional benefits of fruit AND toaster waffles! What you need: 2 Eggo Waffles Whipped Cream Chocolate Syrup Strawberries (thinly sliced, about 5) What to do: 1.) Toast the two waffles golden brown 2.) Allow for the waffles to cool 3.) Put chocolate syrup on ONE of the waffles 4.) Spray whipped cream over syrup 5.) Apply a thin layer of strawberries over whipped cream 6.) Apply whipped cream over strawberries 7.) Put the other waffle on top of the smothered waffle. OPTIONAL: If this doesn't do the trick, add whipped cream, chocolate syrup, and strawberries to the top of the other waffle.

APPLE-SPICE BREAKFAST DRINK

INGREDIENTS: 2 tbsp old fashioned rolled oats 1 pink lady, gala or fiji apple; cored, peeled and chopped into large pieces 1 cup unsweetened almond milk ¼ tsp pure vanilla extract 1½ tsp ground cinnamon ⅛ tsp ground nutmeg a pinch of sea salt (like a tiny pinch...not the pinch measurement, that would be too much) 1 tbsp. ground flaxseed pure maple syrup to taste (I used 2½ tsp)

Falls fast upon us and oatmeal makes for a healthy, warm, fall breakfast. But if your like me you get bored of things quickly so here's some awesome oatmeal combinations to try! Blueberry Muffin- Blueberries, Cinnamon, and a TSP of Brown Sugar. Peaches and Cream- Peach slices (fresh or frozen) and Yogurt. Apple Cobbler- Apple slices, Cinnamon, and half a Graham Cracker sheet. Savory- Cheese, Onions, and Scallions.
