Tortilla de Patatas (Potato Omelette)

I bet this would be good with sweet potatoes, too. Ingredients 1 cup olive oil 4 eggs with milk 4 potatoes cut into cubes salt an onion cut into slices Directions In a large skillet non warms the oil and add potatoes alternately with onion.Cook at medium heat because we do not want to fry and mix with wooden spoon until done. The draw and let aside. Mix in a bowl of eggs, salted and add the potatoes and onion. The left 15 minutes and warm 2 tablespoons olive oil in a dry skillet. Add eggs and cook until potatoes begin to become red. We turn the omelet hand, cook for another 2 minutes and serve.
